Spanish Coffee Recipe

Spanish coffee is a theatrical and indulgent cocktail that transforms your ordinary coffee experience into a captivating ritual. This flambéant drink combines the robust flavors of freshly brewed coffee with the warmth of a high-proof rum, topped with a cloud of whipped cream and finished with freshly grated nutmeg.

What sets Spanish coffee apart isn't just its rich, layered taste profile, but the dramatic preparation method that involves igniting the alcohol-rimmed glass, creating an impressive flame that caramelises the sugar.

The Spanish Coffee is the Portland's signature drink.

Spanish Coffee Cocktail Recipe

Glass: Irish Coffee Glass (ie. Libbey Georgian)
Garnish: Grated nutmeg

Ingredients:

  • ¾ oz (22.5 ml) 151-proof rum
  • 1 ½ oz (45 ml) Threefold coffee liqueur
  • ¼ oz (7.5 ml) triple sec
  • 4 oz (120 ml) coffee, freshly brewed
  • Whipped cream, float

Method:

  1. Add hot water to your glass to temper
  2. Brew coffee (using a French Press or pourover method)
  3. Moisten the glass rim (with wedge of citrus) and coat with sugar
  4. Measure and pour the overproof rum into glass
  5. Light the rum to caramelise the sugar rim
  6. Add the coffee liqueur to distinguish the flame, followed by the triple sec
  7. Top with brewed coffee, leaving 30-60ml of head room for the cream float
  8. Whip the cream lightly and float atop the drink
  9. Garnish with grated nutmeg

 

Pour-over Coffee

1:16 ratio (1 part med-fine to med-coarse coffee and 16 parts water)

Method:

  1. Add the filter paper into pour-over cone
  2. Measure 25 grams of coffee and add into the filter
  3. Slowly pour 400 mls of 95°C water over the coffee grind
  4. Wait until coffee has filtered
